Potato Soup
6 potatoes (peeled and cut into small one inch cubes)
1 onion (chopped)
6 cups chicken broth
1/4 cup butter
5 tablespoons flour
salt, pepper, garlic powder to taste
1 cup half and half
6 slices bacon ( cut up into 1/2 inch pieces and fried) for garnish (optional)
Crushed seasoned croutons for garnish(optional)
Shredded cheddar cheese for garnish (optional)
Sauté onions in oil and add potatoes and broth. Cook until potatoes are cooked and let cool for awhile. Purée with a blender or an emersion blender until smooth. Bring back to a boil. Melt butter and blend flour into butter. Stir butter mixture into the boiling soup. Add seasoning to your taste. Add half and half. Serve hot with garnishes. Enjoy!
