National Baked Alaska Day

Today is National Baked Alaska Day! We ate this one last night so I could post pictures of it. It was delicious and easy to make. You could make it any size and any flavors of ice cream. We used Neapolitan.
Line a bowl ( whatever size you want to make) with Saran Wrap. Scoop the slightly softened ice cream into the bowl. Cut pound cake about 1” thick and cover the ice cream with pound cake like a jigsaw puzzle. Make sure it is all covered. Pull the Saran Wrap around the top and freeze it in the bowl. This can be done several days ahead. Then pull it from the freezer and get it out of the bowl and remove the Saran Wrap. Make a merengue with 6 egg whites, 1/2 cup of sugar and 1/4 tsp. of cream of tartar. Spread over the ice cream and freeze again uncovered. This can be done 1 – 24 hours ahead of time. Bake in a 500 degree oven for 3 – 5 minutes, just to brown the merengue. Watch it carefully in the oven as it may brown quickly. Before you try this make sure you have room in your freezer for it. This was very easy to make and you can use different ice creams to fit the occasion. And it was delicious! Enjoy!!
